Ingredients
  

For the Honey Garlic Chicken
  • 4 pieces boneless skinless chicken breasts
  • 1/4 cup honey
  • 4 cloves garlic minced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cups cooked rice
For the Avocado Salad
  • 1 piece avocado diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1 tbsp lime juice
  • Fresh cilantro

Method
 

  1. Step 1: In a mixing bowl, combine honey, minced garlic, soy sauce, olive oil, salt, and pepper. Mix well to create the marinade.
  2. Step 2: Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes.
  3. Step 3: Preheat the grill or a skillet over medium-high heat. Remove the chicken from the marinade, discarding the excess marinade.
  4. Step 4: Grill the chicken for 6-7 minutes on each side, or until fully cooked and golden brown.
  5. Step 5: While the chicken cooks, prepare the avocado salad. In a bowl, combine diced avocado, cherry tomatoes, red onion, lime juice, salt, and pepper. Toss gently to mix.
  6. Step 6: Serve the grilled honey garlic chicken over a bed of cooked rice, accompanied by the fresh avocado salad. Garnish with cilantro if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The avocado salad is best enjoyed fresh, but you can keep it in the fridge for a day if you store the avocado separately to avoid browning.
