Ingredients

For the Honey Garlic Chicken
  • 1 lb chicken breast diced
  • 1 lb shrimp peeled and deveined
  • 2 cups cooked rice
  • 3 tbsp honey
  • 3 tbsp soy sauce
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 green onions chopped for garnish
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Equipment

  • Large Skillet
  • medium bowl

Method

  1. Step 1: In a medium bowl, combine honey, soy sauce, and minced garlic. Add the diced chicken, ensuring it's well coated, and marinate for at least 30 minutes for the best flavor.
  2. Step 2: Heat the olive oil in a large skillet over medium heat. Add the marinated chicken and cook until it’s fully cooked through, about 5-7 minutes. Once done, remove it from the skillet and set it aside.
  3. Step 3: In the same skillet, add the peeled and deveined shrimp. Sprinkle with Cajun seasoning and cook until shrimp are pink and opaque, about 3-4 minutes. Remove from the skillet and set aside.
  4. Step 4: Add mixed vegetables to the skillet and sauté for 2-3 minutes until they are tender.
  5. Step 5: Stir in the cooked rice and mix well, ensuring the rice is combined with the vegetables. Return the cooked chicken and shrimp back to the skillet, mixing until everything is heated through.
  6. Step 6: Season with salt and pepper to taste. Garnish with chopped green onions and sesame seeds if desired.
  7. Step 7: Serve in bowls and enjoy your delightful Honey Garlic Chicken and Cajun Shrimp Fried Rice!

Notes

To store leftovers, let the dish cool completely before transferring it to an airtight container. It will keep well in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop, adding a splash of water if needed to prevent sticking.
