- Step 1: Start by seasoning the beef chuck roast generously with salt and pepper.
- Step 2: In a large skillet, heat the olive oil over medium-high heat. Sear the roast on all sides until it’s beautifully browned, about 4-5 minutes per side.
- Step 3: Transfer the seared roast to your slow cooker.
- Step 4: Add the beef broth, minced garlic, chopped onion, carrots, potatoes, rosemary, thyme, and Worcestershire sauce to the slow cooker.
- Step 5: Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the meat is fork-tender.
- Step 6: Once cooked, carefully remove the roast and vegetables from the slow cooker. Let the roast rest for a few minutes before slicing.
- Step 7: Serve the sliced pot roast with the roasted vegetables. Enjoy every bite!
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze them for up to 3 months. Just make sure to thaw overnight in the fridge before reheating!
