Ingredients
  

  • 1 cup cottage cheese 4% milkfat recommended for richness, but any will work
  • 1 tsp vanilla extract
  • 2 tbsp honey or pure maple syrup adjust to taste
  • 1 cup almond flour
  • 1 scoop protein powder optional, vanilla or unflavored work best
  • ΒΌ cup mini chocolate chips

Method
 

  1. Step 1: In a food processor or high-powered blender, combine the cottage cheese, honey (or maple syrup), and vanilla extract. Blend until the mixture is completely smooth and creamy, scraping down the sides as needed.
  2. Step 2: Transfer the smooth cottage cheese mixture to a medium bowl. Add the almond flour and the optional protein powder.
  3. Step 3: Stir everything together with a spatula or spoon until it's well combined and looks like cookie dough (thick and scoopable).
  4. Step 4: Gently fold in the mini chocolate chips.
  5. Step 5: Taste the dough and adjust sweetness or vanilla extract if needed.
  6. Step 6: Enjoy immediately or chill in the fridge for 30 minutes or longer for a firmer texture and melded flavors.

Notes

Ensure cottage cheese is blended until completely smooth for the best texture. Mini chocolate chips distribute well throughout the dough. Chilling the dough helps it firm up and improves flavor. Store leftovers in an airtight container in the refrigerator for 3-4 days; the flavor may improve over time. This recipe is safe to eat raw as it contains no raw eggs or wheat flour, but it is not designed for baking.
