Ingredients

  • boneless, skinless chicken breasts 4 The lean protein star of our show!
  • 1 10.5 oz can cream of chicken soup The creamy binder that makes everything meld together beautifully.
  • 1/2 cup sour cream Adds a touch of tang and extra creaminess.
  • 1/3 cup low-sodium chicken broth Helps thin out the sauce and keeps everything moist.
  • 1 box (6 oz) stuffing mix The classic topping that gets wonderfully tender and flavorful.
  • 1/2 cup chopped celery For a subtle crunch and fresh flavor.
  • 1/2 cup chopped onion Adds a sweet aromatic base.
  • 1/2 teaspoon garlic powder Because garlic makes everything better!
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Equipment

  • Slow Cooker
  • Separate Bowl
  • Whisk
  • Fork

Method

  1. First things first, grab your slow cooker. Arrange the chicken breasts in the bottom. Give them a little sprinkle of salt, pepper, and that handy garlic powder.
  2. Now, in a separate bowl, whisk together the cream of chicken soup, sour cream, and chicken broth. You want this to be nice and smooth, like a creamy dream!
  3. Gently spread this glorious soup mixture evenly over the chicken in the slow cooker. Make sure every piece of chicken gets some love!
  4. Time for the best part! Sprinkle the stuffing mix evenly over the soup layer. Then, scatter your chopped celery and onion on top of the stuffing. Give it a gentle press down to help everything settle in nicely.
  5. Pop the lid on your slow cooker. Cook on the LOW setting for about 6 hours, or on HIGH for 3–4 hours. You'll know it's ready when the chicken is fork-tender and the stuffing is perfectly fluffy and has absorbed all those delicious flavors.
  6. Once it’s done, carefully remove the lid. Fluff the stuffing with a fork. If you’re feeling fancy, sprinkle some fresh parsley over the top for a burst of color and freshness. Serve it up hot and enjoy the deliciousness!

Notes

Leftovers are the best! Once cooled, store any remaining casserole in an airtight container in the refrigerator for up to 3-4 days. To reheat, simply scoop out a portion and warm it in the microwave or a covered oven at 350°F (175°C) until heated through. You can also freeze portions for a quick meal later on.
