Grilled Garlic Cajun Shrimp Skewers

Ingredients
  

  • 1/2 cup unsalted butter melted
  • 4 cloves garlic pressed or minced
  • 1 Tbsp Cajun spice
  • 1/2 tsp salt
  • 1 Tbsp lemon juice
  • 2 lbs large shrimp uncooked, peeled and deveined

  • Wooden skewers
  • Small saucepan
  • Ramekin
  • Rimmed cookie sheet

Method
 

  1. Step 1: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your grill to medium-high heat (around 400˚F).
  2. Step 2: In a small saucepan, melt butter over low heat. Stir in minced garlic, Cajun spice, salt, and lemon juice. Simmer for a moment until combined and fragrant. Remove from heat. Pour half of the marinade into a separate ramekin for later.
  3. Step 3: Thread about 4 shrimp onto each soaked skewer. Lay skewers on a rimmed cookie sheet. Brush one side of the shrimp with the reserved marinade and refrigerate for 2 minutes. Flip, brush the other side, and refrigerate for another 2 minutes.
  4. Step 4: Place the shrimp skewers on the preheated grill. Close the lid and grill for about 2 minutes per side, until shrimp turn pink and opaque. Remove from grill and brush with the remaining reserved marinade. Serve immediately.

Notes

Add colorful bell pepper chunks, red onion wedges, or cherry tomatoes to the skewers. Garnish with fresh parsley or cilantro before serving. Lime juice can be used instead of lemon for a different citrus flavor.
