- Step 1: Preheat the grill to medium-high heat.
- Step 2: Pound the chicken breasts evenly to about ¼ inch thickness using a meat mallet or heavy pan.
- Step 3: Brush both sides of the chicken with olive oil, then season generously with garlic powder, Italian seasoning, salt, and pepper.
- Step 4: Grill the chicken for approximately 3 minutes per side until nicely seared but not fully cooked through.
- Step 5: Transfer the chicken to a grill-safe pan placed on the grill grate.
- Step 6: Spoon marinara sauce generously over each piece of chicken, then top with fresh mozzarella slices and sprinkle grated Parmesan on top.
- Step 7: Close the grill cover and cook for 2-3 minutes, or until the cheese is melted and bubbly.
- Step 8: Serve immediately while hot and fresh off the grill.
Notes
Substitute provolone or fontina for mozzarella for a different flavor. Try spicy arrabbiata or creamy tomato sauce as an alternative to marinara. Add fresh basil or oregano before serving for a fresh burst. Grill vegetables as a healthy side. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
