- Step 1: Heat the olive oil in a skillet over medium heat. Add the ground beef, breaking it apart with a spatula, and cook until it’s nicely browned and no longer pink.
- Step 2: Stir in the dried oregano, paprika, cumin, minced garlic, salt, and black pepper. Let everything cook together for 2 to 3 minutes until the spices become fragrant and the beef is well seasoned. Then, remove the skillet from heat.
- Step 3: While the beef is cooking, prepare the herbed feta sauce. In a bowl, combine the crumbled feta cheese, Greek yogurt, olive oil, lemon juice, chopped parsley, dried dill, minced garlic, and black pepper. Mix until you get a creamy, smooth sauce. If you want it a little thinner, a splash of water or more yogurt works wonders.
- Step 4: Warm your pita breads slightly—either in a dry pan over medium heat or wrapped in foil in a preheated oven for a few minutes. This makes them soft and easy to fold.
- Step 5: Build your wraps by layering the cooked beef, shredded lettuce, diced tomatoes, and sliced cucumbers right onto the warm pita.
- Step 6: Drizzle generously with the herbed feta sauce. Wrap it up tightly and serve immediately for the best flavor and texture.
Notes
Substitute ground lamb or turkey for beef to vary flavors. Try goat cheese or cream cheese with herbs instead of feta. Add sliced red onions, Kalamata olives, or roasted red peppers for extra veggies. For heat, add crushed red pepper flakes or hot sauce. Make vegetarian by swapping beef for sautéed mushrooms or seasoned lentils. Store cooked beef and sauce separately in airtight containers in the fridge for up to 3 days. Keep veggies fresh until ready to assemble.
