Ingredients
  

For the Toast Base
  • 1 loaf artisanal bread sourdough or whole grain
  • 2 tbsp olive oil for drizzling and toasting the bread
For the Toppings
  • 1 ripe avocado mashed
  • 1 medium tomato sliced
  • 1 cup fresh arugula
  • 4 oz goat cheese crumbled
  • 4 oz smoked salmon
  • 2 large eggs poached or fried
Optional toppings
  • Salt and pepper
  • red pepper flakes
  • lemon zest
  • fresh herbs (such as dill or chives)

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Slice the artisanal bread into thick slices and lay them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Step 3: Pop the bread in the oven and toast for about 8-10 minutes, or until golden brown and crispy.
  4. Step 4: While the bread is toasting, prepare the avocado. Mash it in a bowl, seasoning with salt, pepper, and a squeeze of lemon juice.
  5. Step 5: In a separate pan, poach or fry the eggs to your liking.
  6. Step 6: Assemble the trio: spread the mashed avocado on the first toast, top with sliced tomato and arugula; spread goat cheese on the second toast, top with smoked salmon and fresh herbs; place the poached or fried egg on the third toast, season with salt, pepper, and optional toppings.
  7. Step 7: Arrange all your beautifully topped toasts on a serving board. Serve immediately and enjoy!

Notes

This dish is best enjoyed fresh. However, if you have leftovers, store the toppings separately in airtight containers in the fridge. The toasted bread can be kept in a zip-lock bag at room temperature for a day.
