Ingredients
  

For the Baked Feta Rolls
  • 8 oz feta cheese creamy and tangy
  • 1 cup phyllo dough thawed
  • 1/4 cup olive oil for brushing
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Fresh herbs (optional, for garnish)

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a small saucepan, combine cranberries, honey, lemon juice, salt, and black pepper. Cook over medium heat until the cranberries burst and the mixture thickens, about 5-7 minutes. Remove from heat and let cool.
  3. Step 3: Carefully unroll the phyllo dough and cut it into strips, approximately 4 inches wide.
  4. Step 4: Place one strip of phyllo dough on a clean surface and brush it lightly with olive oil. Layer another strip on top and brush with oil again.
  5. Step 5: Crumble the feta cheese into small pieces and place a portion at one end of the phyllo strip. Roll the dough tightly around the feta to form a roll. Seal the edges with a little olive oil.
  6. Step 6: Repeat the process with the remaining phyllo and feta.
  7. Step 7: Place the rolls on a baking sheet lined with parchment paper. Brush the tops with additional olive oil.
  8. Step 8: Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  9. Step 9: Serve the baked feta rolls warm, drizzled with the sweet cranberry honey. Garnish with fresh herbs if desired.

Notes

If you have any leftovers, store them in an airtight container in the fridge for up to 3 days. To reheat, pop them in the oven at 350°F (175°C) for about 10-15 minutes until warmed through and crispy again.
