Ingredients
  

For the Garlic Shrimp & Vegetable Stir-Fry
  • 1 lb shrimp peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 cup bell peppers sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce optional
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Method
 

  1. Step 1: Heat the olive oil in a large skillet or wok over medium-high heat. You'll want it nice and hot!
  2. Step 2: Add the minced garlic and sauté for about 30 seconds until it becomes fragrant. Don’t let it burn!
  3. Step 3: Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes. They cook quickly, so keep an eye on them!
  4. Step 4: Next, toss in the bell peppers, broccoli, and snap peas. Stir-fry for 3-4 minutes until the veggies are tender-crisp.
  5. Step 5: Pour in the soy sauce and oyster sauce (if using). Stir everything together and cook for an additional minute.
  6. Step 6: Drizzle with sesame oil and season with salt and pepper to taste. Give it one last stir!
  7. Step 7: Serve hot over your choice of cooked rice or noodles and enjoy your creation!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat, adding a splash of water or broth to keep it from drying out.
