Ingredients
  

For the Garlic Parmesan Shrimp Tomato Pasta
  • 8 oz pasta spaghetti or linguine
  • 1 lb shrimp peeled and deveined
  • 4 cloves garlic minced
  • 14.5 oz diced tomatoes canned
  • 1 tsp red pepper flakes optional
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Step 1: Start by cooking the pasta according to the package instructions. Once it’s al dente, drain it and set it aside.
  2. Step 2: In a large skillet, heat the olive oil over medium heat.
  3. Step 3: Add the minced garlic to the skillet and sauté for 1-2 minutes until it’s fragrant. Be careful not to burn it!
  4. Step 4: Next, toss in the shrimp. Cook for 2-3 minutes, stirring occasionally, until they turn pink and are cooked through.
  5. Step 5: Now, stir in the diced tomatoes and red pepper flakes (if you’re using them). Cook for another 3-4 minutes, letting the flavors meld together.
  6. Step 6: It’s time to add the cooked pasta to the skillet. Toss everything together until the pasta is well coated.
  7. Step 7: Remove the skillet from heat and stir in the grated Parmesan cheese until it melts into the pasta.
  8. Step 8: Season with salt and pepper to taste, and garnish with fresh parsley before serving. Enjoy!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm it in a skillet over low heat, adding a splash of water or broth if it seems dry. Enjoy the flavors all over again!
