Garlic-Parmesan Shrimp Puff Pastry Cups

They are not only easy and quick to whip up but also deliver a flavor that feels like a warm hug!

Ingredients
  

For the Puff Pastry Cups
  • 1 sheet puff pastry thawed
  • 1 lb shrimp peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup cream cheese softened
  • 1 tbsp fresh parsley chopped
  • 1 ea egg beaten (for egg wash)

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C) to get it nice and hot.
  2. Step 2: Roll out the puff pastry on a lightly floured surface and cut it into squares that will fit into a muffin tin. Gently press the squares into the muffin cups.
  3. Step 3: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Step 4: Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, approximately 3-4 minutes. Remove from heat.
  5. Step 5: In a mixing bowl, combine the cooked shrimp, Parmesan cheese, cream cheese, and parsley. Mix until well combined.
  6. Step 6: Spoon the shrimp mixture into the prepared puff pastry cups, filling each one generously.
  7. Step 7: Brush the edges of the pastry with the beaten egg for that golden finish.
  8. Step 8: Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown.
  9. Step 9: Remove from the oven and let cool slightly before serving. Enjoy!

Notes

If you happen to have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 350°F (175°C) for about 10 minutes to restore that crispiness.
