Ingredients
  

For the Garlic Mozzarella Chicken Bomb Skewers
  • 2 large boneless, skinless chicken breasts cut into cubes
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 10-12 count fresh mozzarella balls bocconcini or ciliegine
  • 2 tbsp fresh parsley chopped, for garnish (optional)

Method
 

  1. Step 1: Preheat your oven or grill to 400°F (200°C).
  2. Step 2: In a medium bowl, toss chicken cubes with olive oil. Sprinkle in garlic powder, Italian seasoning, smoked paprika, salt, and pepper. Mix well to coat each piece.
  3. Step 3: Gently flatten each seasoned chicken cube. Place one mozzarella ball in the center and carefully fold the chicken around it to completely enclose the cheese, forming a "bomb.".
  4. Step 4: Gently thread 3 to 4 chicken "bombs" onto each skewer, leaving a little space between them. If using wooden skewers, soak them in water for 30 minutes prior to use.
  5. Step 5: Place skewers on the preheated grill or in the oven. Cook for 20 to 25 minutes, flipping halfway through, until the chicken is cooked through and golden brown, and the mozzarella is melted.
  6. Step 6: Remove from heat. Garnish with fresh chopped parsley, if desired. Serve warm.

Notes

Don't overstuff the skewers and ensure the chicken fully encloses the mozzarella. Pinch the edges of the chicken to prevent cheese from oozing out. You can assemble skewers a few hours ahead and refrigerate them.
