- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a small bowl, combine the melted butter, minced garlic, lemon juice, salt, and pepper. Mix and set aside.
- Step 3: On a baking sheet, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out in a single layer.
- Step 4: Roast the potatoes in the preheated oven for 15 minutes.
- Step 5: After 15 minutes, add the trimmed asparagus to the baking sheet and toss to combine.
- Step 6: Place the salmon fillets on the baking sheet and brush each fillet with the garlic butter mixture.
- Step 7: Return the baking sheet to the oven and roast for an additional 12-15 minutes.
- Step 8: Remove from the oven and garnish with chopped parsley. Serve with lemon wedges.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for the best results.
