Ingredients
  

For the Garlic Butter Salmon
  • 4 fillets salmon fresh or frozen
  • 4 tbsp unsalted butter melted
  • 4 cloves garlic minced
  • 1 tsp lemon juice
  • 1 lb baby potatoes halved
  • 1 bunch asparagus trimmed
  • 2 tbsp olive oil
For Garnish
  • Fresh parsley chopped
  • Lemon wedges for serving

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a small bowl, combine the melted butter, minced garlic, lemon juice, salt, and pepper. Mix and set aside.
  3. Step 3: On a baking sheet, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out in a single layer.
  4. Step 4: Roast the potatoes in the preheated oven for 15 minutes.
  5. Step 5: After 15 minutes, add the trimmed asparagus to the baking sheet and toss to combine.
  6. Step 6: Place the salmon fillets on the baking sheet and brush each fillet with the garlic butter mixture.
  7. Step 7: Return the baking sheet to the oven and roast for an additional 12-15 minutes.
  8. Step 8: Remove from the oven and garnish with chopped parsley. Serve with lemon wedges.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for the best results.
