- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: In a large mixing bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
- Step 3: Roast the potatoes in the preheated oven for 20-25 minutes, or until crispy and golden brown, flipping halfway through for even cooking.
- Step 4: While the potatoes are roasting, heat 2 tablespoons of butter in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Step 5: Season the salmon fillets with salt and pepper. Place them in the skillet, skin side down, and cook for 4-5 minutes.
- Step 6: Flip the fillets and add the remaining butter to the skillet. Cook for an additional 3-4 minutes or until the salmon is cooked through and flakes easily with a fork.
- Step 7: In another pan, add the fresh spinach and sauté until wilted, about 2-3 minutes. Squeeze lemon juice over the spinach and season with salt and pepper.
- Step 8: Serve the salmon alongside the crispy potatoes and sautéed spinach, garnished with chopped parsley for a fresh finish.
