  • 1 lb large shrimp peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 each lemon juice and zest
  • 1 cup cooked rice or quinoa for serving
  • 1 cup corn fresh, frozen, or canned
  • 1 each fresh parsley chopped, for garnish
  • 1 each lemon wedges for serving

Method
 

  1. Step 1: In a large skillet, melt the butter over medium heat. You want to see it just start to bubble!
  2. Step 2: Add the minced garlic and sauté for about 1 minute, until fragrant.
  3. Step 3: Add the shrimp to the skillet. Season with salt and pepper, and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
  4. Step 4: Stir in the lemon juice and zest, mixing well to combine.
  5. Step 5: In serving bowls, layer the cooked rice or quinoa and corn. Top with the garlic butter shrimp.
  6. Step 6: Garnish with chopped parsley and serve with lemon wedges on the side.
