- Step 1: In a large skillet, melt the butter over medium heat. You want to see it just start to bubble!
- Step 2: Add the minced garlic and sauté for about 1 minute, until fragrant.
- Step 3: Add the shrimp to the skillet. Season with salt and pepper, and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
- Step 4: Stir in the lemon juice and zest, mixing well to combine.
- Step 5: In serving bowls, layer the cooked rice or quinoa and corn. Top with the garlic butter shrimp.
- Step 6: Garnish with chopped parsley and serve with lemon wedges on the side.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stove or in the microwave, adding a splash of water to keep it moist.
