- Step 1: Grab a nice, deep skillet and heat your olive oil over medium-high heat. While that's warming up, toss your chicken pieces with Italian seasoning, paprika, salt, and pepper. Once the oil is shimmering, add the seasoned chicken to the skillet. You want it to get beautifully golden brown and cooked through, which should take about 6–7 minutes. Now, add the 3 tablespoons of butter and your minced garlic. Stir it around for another minute or two until it smells absolutely amazing. Once the chicken is perfectly cooked and coated in that garlicky goodness, scoop it out of the skillet and set it aside. Don't worry about any bits left in the pan – they're full of flavor!
- Step 2: In that same skillet (yes, we're doing a one-skillet wonder here!), pour in your chicken broth and heavy cream. Bring this mixture to a gentle simmer. Now, add your rigatoni pasta. Cook it uncovered for about 12–15 minutes, giving it a stir every so often to make sure the pasta doesn't stick together and cooks evenly until it's nice and tender.
- Step 3: Turn the heat down to low – we don't want anything to scorch! Stir in your softened cream cheese until it melts into a smooth, luscious base. - Step 4: If your sauce looks a little too thick for your liking (it happens!), just grab that reserved pasta water you saved earlier and add it in a little bit at a time, stirring until you reach your perfect sauce consistency. Now, it’s time for the star of the show – return those glorious garlic butter chicken bites to the skillet. Toss everything together gently until every piece of chicken and every strand of pasta is coated in that dreamy sauce. It’s almost ready!
