- Step 1: In a small bowl, whisk together your melted butter, minced garlic, dried parsley, salt, and pepper. Give it a good stir until it's all combined. This is our flavor secret weapon!
- Step 2: Preheat your oven to 375°F (190°C). Grab a baking sheet and line it with parchment paper. Lay out your flour tortillas on a clean, flat surface.
- Step 3: Generously brush each tortilla with the garlic butter mixture. Don't be shy!
- Step 4: Evenly sprinkle the crumbled bacon over each buttered tortilla. Then, scatter the shredded cheddar and mozzarella cheese on top. If you're using chives, sprinkle them on now.
- Step 5: Starting from one edge, tightly roll up each tortilla like a little burrito. Place the rolled-up tortillas seam-side down on your prepared baking sheet.
- Step 6: Brush any leftover garlic butter over the tops of the rollups for extra crispiness and flavor!
- Step 7: Pop them into the preheated oven and bake for about 12-15 minutes, until golden brown and delightfully crispy, with the cheese melted and bubbly.
- Step 8: Once they're out of the oven, let them cool for just a few minutes. Then, slice each rollup into bite-sized pinwheels and arrange them on a platter.
Notes
You can assemble the rollups a few hours in advance and store them covered in the refrigerator. To reheat, pop them back in the oven at around 350°F (175°C) for a few minutes until warmed through and crispy again, or use an air fryer.
