- Step 1: The Creamy Filling. First things first, let’s make that luscious filling. In a medium bowl, grab your softened cream cheese and powdered sugar. Beat them together with a whisk or an electric mixer until they’re super smooth and wonderfully fluffy. No lumps allowed!
- Step 2: Assemble the Sandwiches. Now, lay out four of your bread slices. Spread that glorious cream cheese mixture evenly over each one, leaving a little space around the edges. Then, artfully arrange your thinly sliced strawberries on top. Spoon a little of the strawberry preserves over the strawberries. Finally, place the remaining four bread slices on top to create your sandwiches. Give them a gentle press to make sure everything stays put.

While these are absolutely divine as is, sometimes it’s fun to switch things up! If you don’t have brioche or challah, a good quality white bread or even a slightly denser sourdough can work in a pinch. For the filling, you could try using a different fruit preserve like raspberry or even a dollop of your favorite homemade pesto for a savory twist (though that might be a bit adventurous for this sweet treat!). If you’re a big fan of chocolate, a few mini chocolate chips scattered with the strawberries would be a delightful addition.
