Ingredients
  

For the Fresh Homemade Salsa
  • 1 lb Roma tomatoes halved or quartered
  • 12 oz canned petite diced tomatoes with juice
  • 1/2 cup white onion chopped
  • 1 jalapeno pepper roughly chopped, seeded
  • 1/3 cup fresh cilantro
  • 2 cloves garlic roughly chopped
  • 1 Tbsp lime juice from 1/2 fresh lime
  • 1/2 tsp chili powder
  • 1 tsp ground cumin
  • 2 tsp salt adjust to taste

  • Food Processor or High-Speed Blender

Method
 

  1. Step 1: Combine all prepared ingredients (tomatoes, diced tomatoes, onion, jalapeno, cilantro, garlic, lime juice, chili powder, cumin, and salt) in a food processor or high-speed blender.
  2. Step 2: Pulse in short, 2-second bursts until the ingredients are chopped and combined, but not over-blended into a puree. Aim for a chunky, fresh texture.
  3. Step 3: Cover the salsa and refrigerate for at least two hours to allow the flavors to meld. Stir before serving and adjust salt or lime juice to taste.

Notes

Don't over-process the salsa; pulsing is key for texture. Taste and adjust seasonings before serving. This salsa tastes even better the next day.
