- Step 1: In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- Step 2: In another bowl, combine the milk, egg, melted butter, and vanilla extract. Mix well until everything is combined.
- Step 3: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Remember, a few lumps are okay; overmixing can lead to tough pancakes.
- Step 4: Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or cooking spray to prevent sticking.
- Step 5: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Step 6: Flip the pancakes and cook for an additional 1-2 minutes, until they are golden brown.
- Step 7: Remove from the skillet and keep warm while you repeat with the remaining batter.

Notes
To store leftover pancakes, let them cool completely and then place them in an airtight container in the refrigerator for up to 3 days. You can also freeze them! Just layer them between sheets of parchment paper and store them in a freezer-safe bag. They will last for up to 2 months. To reheat, simply pop them in the toaster or microwave until warmed through.
