Method
- Step 1: Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- Step 2: Place the whole oranges in a pot, cover with water, and bring to a boil. Reduce heat and simmer for about 1 hour until soft. Drain and let cool.
- Step 3: Once cooled, cut the oranges in half and remove any seeds. Place the oranges in a food processor and blend until smooth.
- Step 4: In a separate bowl, finely grind the pistachios until they resemble a coarse meal.
- Step 5: In a large mixing bowl, combine the orange puree, ground pistachios, sugar, eggs, baking powder, and salt. Mix until well combined.
- Step 6: Pour the batter into the prepared cake pan and smooth the top.
- Step 7: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Step 8: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Step 9: Dust with powdered sugar before serving, if desired.
