  • 1 cup pistachios shelled

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. Step 2: Place the whole oranges in a pot, cover with water, and bring to a boil. Reduce heat and simmer for about 1 hour until soft. Drain and let cool.
  3. Step 3: Once cooled, cut the oranges in half and remove any seeds. Place the oranges in a food processor and blend until smooth.
  4. Step 4: In a separate bowl, finely grind the pistachios until they resemble a coarse meal.
  5. Step 5: In a large mixing bowl, combine the orange puree, ground pistachios, sugar, eggs, baking powder, and salt. Mix until well combined.
  6. Step 6: Pour the batter into the prepared cake pan and smooth the top.
  7. Step 7: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Step 8: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Step 9: Dust with powdered sugar before serving, if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze slices for up to 3 months.
