- Step 1: Blend softened cream cheese and shredded cheddar cheese in a mixing bowl until smooth and creamy.
- Step 2: Fold in black beans, corn, diced tomatoes, red onion, cilantro, and minced jalapeño. Add lime juice, chili powder, cumin, salt, and pepper. Stir gently but thoroughly.
- Step 3: Shape mixture into a log or ball. Wrap tightly in plastic wrap.
- Step 4: Chill in the refrigerator for at least 2 hours to firm up and meld flavors.
- Step 5: Unwrap and optionally roll in extra chopped cilantro or diced tomatoes for garnish.
- Step 6: Serve chilled with plenty of crunchy tortilla chips for dipping.
Notes
For dairy-free, substitute with plant-based cream cheese and shredded cheese. Add bell peppers or green onions for extra crunch. Make ahead and store wrapped in the fridge up to 4 days or freeze up to 1 month. Serve chilled for best flavor.
