  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn canned or frozen
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 jalapeño seeded and minced
  • 1 tsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • salt and pepper to taste
  • tortilla chips for serving

Method
 

  1. Step 1: Blend softened cream cheese and shredded cheddar cheese in a mixing bowl until smooth and creamy.
  2. Step 2: Fold in black beans, corn, diced tomatoes, red onion, cilantro, and minced jalapeño. Add lime juice, chili powder, cumin, salt, and pepper. Stir gently but thoroughly.
  3. Step 3: Shape mixture into a log or ball. Wrap tightly in plastic wrap.
  4. Step 4: Chill in the refrigerator for at least 2 hours to firm up and meld flavors.
  5. Step 5: Unwrap and optionally roll in extra chopped cilantro or diced tomatoes for garnish.
  6. Step 6: Serve chilled with plenty of crunchy tortilla chips for dipping.

Notes

For dairy-free, substitute with plant-based cream cheese and shredded cheese. Add bell peppers or green onions for extra crunch. Make ahead and store wrapped in the fridge up to 4 days or freeze up to 1 month. Serve chilled for best flavor.
