Ingredients
  

  • 12 large jalapeños halved and seeded
  • 1/2 lb cooked shrimp finely chopped
  • 1/2 cup cream cheese softened
  • 1/4 cup shredded cheddar cheese
  • 1 tsp Cajun seasoning
  • 1/4 cup cooked bacon crumbled
  • fresh chives for garnish

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a medium bowl, combine the finely chopped cooked shrimp, softened cream cheese, shredded cheddar cheese, Cajun seasoning, and crumbled bacon. Stir until well incorporated.
  3. Step 3: Spoon the shrimp mixture generously into each prepared jalapeño half. Arrange the stuffed jalapeños on a baking sheet lined with parchment paper.
  4. Step 4: Bake for 12-15 minutes, or until the cheese is bubbly and lightly golden, and the jalapeños are tender.
  5. Step 5: Sprinkle with fresh chives and serve warm.

Notes

For less heat, remove more of the jalapeño seeds and membranes. For more heat, add a pinch of cayenne pepper. You can substitute cheddar cheese with pepper jack, Monterey Jack, or Parmesan. Crab meat or finely chopped chicken can be used instead of shrimp. Finely chopped red onion or garlic powder can be added for extra flavor.
