Ingredients
  

For the Pistachio Crown
  • 1 cup shelled pistachios finely ground
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter softened
  • 2 large egg whites
  • 1/2 teaspoon vanilla extract
  • a pinch salt
For the Vanilla Core
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large egg yolks
For Garnish
  • chopped pistachios
  • edible gold leaf

Method
 

  1. Step 1: Prepare the Pistachio Crown: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the ground pistachios, sugar, softened butter, egg whites, vanilla extract, and salt. Mix until everything is well combined. Spoon the mixture into crown-shaped silicone molds or shape them by hand on the prepared baking sheet. Bake for 15-20 minutes or until the edges are golden. Allow them to cool completely.
  2. Step 2: Make the Vanilla Core: In a saucepan, heat the heavy cream and sugar over medium heat until the sugar dissolves. Make sure it doesn’t boil! In a separate bowl, whisk the egg yolks. Gradually add the warm cream mixture to the yolks, whisking continuously to prevent curdling. Return the mixture to the saucepan and cook over low heat until it thickens enough to coat the back of a spoon. Remove from heat and stir in the vanilla extract. Strain the mixture through a fine sieve to remove any lumps and let it cool.
  3. Step 3: Assemble the Crowns: Once the pistachio crowns are cooled, carefully remove them from the molds. Fill the center of each crown with the vanilla core mixture. Garnish with chopped pistachios and, if you're feeling fancy, add a bit of edible gold leaf for that extra wow factor!
  4. Step 4: Serve: Chill the assembled crowns in the refrigerator for at least 30 minutes before serving. Enjoy your delightful creation!
