- Step 1: Blend the Base: Add the cold pineapple juice, coconut cream, and crushed ice to your blender.
- Step 2: Get it Smooth: Blend until the mixture is completely smooth, thick, and creamy. Use a tamper if needed to ensure everything is incorporated.
- Step 3: Scoop the Sherbet: Carefully scoop the rainbow sherbet into the bottom of a clear glass.
- Step 4: Pour the Swirl: Gently pour the blended coconut-pineapple mixture over the sherbet in the glass.
- Step 5: Create the Swirl: Gently swirl a spoon or straw through the drink a few times to create ribbons of color, but don't over-mix.
- Step 6: Add the Fun (Optional): Top with whipped cream, sprinkles, or other garnishes if desired.
- Step 7: Serve & Enjoy: Add a straw and serve immediately to enjoy ice cold.
Notes
Best enjoyed fresh, as the texture changes upon melting. To store leftovers, keep the blended liquid base in an airtight container in the fridge for up to a day and re-blend before pouring over fresh sherbet.
