Ingredients
  

For the Meat Sauce
  • 1 pound ground beef
  • 1 small sweet onion diced
  • 2 cloves garlic minced
  • 1 15-ounce can tomato sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
For the Noodle Mixture
  • 12 ounces egg noodles
  • 1 1/2 cups small curd cottage cheese
  • 3/4 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
For the Topping
  • 8 ounces shredded Colby Jack cheese

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Lightly spray a 9x13-inch baking dish with cooking spray.
  2. Step 2: In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is no longer pink and the onion is softened (about 8-10 minutes).
  3. Step 3: Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
  4. Step 4: Pour in the tomato sauce, then stir in 1/2 teaspoon salt and 1/2 teaspoon black pepper. Bring to a simmer, then reduce heat to low and let cook uncovered for 15 minutes, stirring occasionally.
  5. Step 5: Cook the egg noodles according to package directions. Drain them well.
  6. Step 6: In a large bowl, combine the cottage cheese, sour cream, the other 1/2 teaspoon salt, 1/2 teaspoon black pepper, garlic powder, and onion powder. Mix until well combined.
  7. Step 7: Add the cooked noodles to the creamy mixture and gently stir to coat.
  8. Step 8: Spoon half of the noodle mixture into the prepared baking dish. Spread half of the meat sauce over the noodles, then sprinkle with half of the shredded Colby Jack cheese.
  9. Step 9: Repeat the layers with the remaining noodle mixture, meat sauce, and Colby Jack cheese.
  10. Step 10: Bake for 20 minutes, or until heated through and the cheese is melted and bubbly.

Notes

This bake can be assembled a day in advance and refrigerated. Add a few extra minutes to the baking time if baking from cold. For a vegetarian option, omit the ground beef and add extra vegetables like mushrooms or spinach.
