- Step 1: Preheat your oven to 350°F (175°C). Lightly spray a 9x13-inch baking dish with cooking spray.
- Step 2: In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is no longer pink and the onion is softened (about 8-10 minutes).
- Step 3: Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
- Step 4: Pour in the tomato sauce, then stir in 1/2 teaspoon salt and 1/2 teaspoon black pepper. Bring to a simmer, then reduce heat to low and let cook uncovered for 15 minutes, stirring occasionally.
- Step 5: Cook the egg noodles according to package directions. Drain them well.
- Step 6: In a large bowl, combine the cottage cheese, sour cream, the other 1/2 teaspoon salt, 1/2 teaspoon black pepper, garlic powder, and onion powder. Mix until well combined.
- Step 7: Add the cooked noodles to the creamy mixture and gently stir to coat.
- Step 8: Spoon half of the noodle mixture into the prepared baking dish. Spread half of the meat sauce over the noodles, then sprinkle with half of the shredded Colby Jack cheese.
- Step 9: Repeat the layers with the remaining noodle mixture, meat sauce, and Colby Jack cheese.
- Step 10: Bake for 20 minutes, or until heated through and the cheese is melted and bubbly.
Notes
This bake can be assembled a day in advance and refrigerated. Add a few extra minutes to the baking time if baking from cold. For a vegetarian option, omit the ground beef and add extra vegetables like mushrooms or spinach.
