  • 1 cup mini pickles Cornichons or dill mini pickles are perfect.
  • 1/2 cup diced bell peppers red, yellow, or orange
  • 1/4 cup chopped fresh parsley or dill
  • 1/3 cup olive oil good quality extra virgin
  • 2 tablespoons white wine vinegar or apple cider vinegar
  • 1 clove garlic minced
  • 1/2 teaspoon black pepper freshly ground
  • 1/4 teaspoon red pepper flakes optional

  1. Step 1: Prep your goodies: First, grab your cheese and make sure it's cut into nice bite-sized cubes (about 1/2 to 3/4 inch). Dice up those bell peppers into similar sizes. If your pickles are on the bigger side, slice them in halves or quarters so they mingle nicely with the other ingredients.
  2. Step 2: Layer it up: Grab a jar or container. Start layering your ingredients: a handful of cheese cubes, some salami rounds, some pickles, some peppers. Repeat these layers until you've used everything up. Try to distribute them relatively evenly.
  3. Step 3: Whisk the magic marinade: In a separate small bowl, whisk together the olive oil, vinegar, minced garlic, black pepper, and those optional red pepper flakes. Give it a good mix until it's well combined. Then, stir in your fresh chopped herbs.
  4. Step 4: Pour and press: Gently pour the marinade right over your layered ingredients in the jar or container. Use a spoon or fork to gently press down on the ingredients so the marinade coats everything nicely.
  5. Step 5: Let the flavors meld: Seal up the jar or container tightly and pop it in the refrigerator. You need at least 2 hours for the flavors to start developing, but it's so much better if you let it marinate overnight.

Stick to semi-firm cheeses as recommended; super soft or hard cheeses won't absorb the marinade well. For the best flavor, let the marinated cheese sit out of the fridge for about 15-20 minutes before serving to take the chill off. Keep any leftovers stored in a sealed container or jar in the refrigerator. It continues to marinate, so it often tastes even better the next day! It should keep well in the fridge for about 3-5 days. Serve it with simple crackers, slices of crusty bread, or just with toothpicks for easy grabbing!
