Ingredients
  

  • 2 sleeves graham crackers
  • 1.25 cups butter (2 ½ sticks)
  • 1.25 cups brown sugar
  • 2.5 cups chopped pecans or other nuts
  • 1 teaspoon vanilla extract
  • 0.75 cup mini semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Arrange graham crackers in a single layer on the prepared baking sheet.
  3. In a medium saucepan, melt butter over medium heat. Stir in brown sugar and cook, stirring constantly, until bubbling. Boil for 2 minutes.
  4. Remove from heat and stir in vanilla extract and chopped pecans.
  5. Pour the toffee mixture over the graham crackers, spreading evenly with a spatula.
  6. Bake for 10 minutes.
  7. Remove from oven and immediately sprinkle chocolate chips over the hot toffee.
  8. Let cool completely on the baking sheet for at least 1 hour, or until firm. Break into pieces.

Notes

For variations, try different nuts like walnuts or almonds, or use milk, dark, or white chocolate chips. You can also add sea salt, crushed candy canes, or cinnamon for extra flavor.
