  • Parchment paper

Method

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Line a baking sheet with parchment paper.
  3. Step 3: Place small mounds of shredded cheese (about silver dollar size) onto the lined baking sheet, leaving space between them. Gently flatten slightly.
  4. Step 4: Place a pepperoni or two onto the center of each cheese mound.
  5. Step 5: Bake for 5–7 minutes, or until edges are golden brown and crispy. Watch closely as oven times vary.
  6. Step 6: Carefully remove from oven and let cool on the baking sheet for a minute or two until firm.
  7. Step 7: Use a spatula to lift chips off the parchment paper. Serve immediately.

Notes

Use parchment paper for easy cleanup and to prevent sticking. Don't overcrowd the baking sheet and watch closely while baking as ovens vary; the difference between perfectly crispy and burnt can be seconds. Letting the chips cool on the baking sheet is crucial for crispiness. Try to make your cheese mounds roughly the same size so they bake at the same rate. These are best enjoyed fresh, warm out of the oven. Store leftovers in an airtight container at room temperature; they may lose some crispiness but can be briefly reheated in a toaster oven or air fryer. Feel free to swap cheese types (like provolone, Monterey Jack, or sharp cheddar) or add finely chopped olives, bell pepper, Italian seasoning, or pesto before baking. Serve plain or with marinara or ranch for dipping.
