Ingredients
  

  • 1 cup full-fat cottage cheese
  • 1/2 cup shredded cheddar cheese or other cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika smoked paprika optional
  • Salt and pepper to taste
  • 1 tbsp olive oil or cooking spray, for greasing

Method
 

  1. Step 1: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat, or grease it lightly with olive oil or cooking spray.
  2. Step 2: In a medium bowl, combine the full-fat cottage cheese, shredded cheese, garlic powder, onion powder, paprika, salt, and pepper. Stir well until everything is combined.
  3. Step 3: Scoop spoonfuls of the mixture onto the prepared baking sheet, leaving about an inch of space between each. Flatten each scoop into a thin, even round, aiming for 1/8 to 1/4 inch thickness.
  4. Step 4: Bake for 15–20 minutes, or until the edges are golden brown and the centers look set. Baking time may vary depending on your oven and chip thickness.
  5. Step 5: Remove from the oven and let the chips cool completely on the baking sheet for at least 5-10 minutes. They will crisp up as they cool.

Notes

For best results, use full-fat cottage cheese as it crisps up better than lower fat versions. Ensure chips are flattened evenly and not overcrowded on the baking sheet. Cooling completely on the sheet is crucial for maximum crispness. Store leftovers in an airtight container at room temperature for 2-3 days; texture may soften over time. They are delicious on their own or served with dips like salsa, guacamole, or hummus.
