Ingredients
  

For the Bars
  • 1 cup butter softened
  • 8 ounces almond paste
  • 2 cups granulated sugar
  • 2 large eggs
  • 2.25 cups all-purpose flour
  • 0.5 tsp salt
For the Glaze
  • 1 cup powdered sugar
  • 1 tsp almond extract
  • 3-4 tbsp milk

Method
 

  1. Step 1: Preheat your oven to 300°F (150°C). Grease a 9x13 inch baking dish.
  2. Step 2: In a large bowl, cream together softened butter and almond paste until smooth and creamy.
  3. Step 3: Add granulated sugar and eggs to the butter mixture. Mix until thoroughly combined and light and fluffy.
  4. Step 4: In a separate bowl, sift together flour and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  5. Step 5: Spoon the batter into the prepared baking dish and press evenly to smooth the top.
  6. Step 6: Bake for about 1 hour, or until lightly browned and the center feels firm.
  7. Step 7: While the bars bake, whisk together powdered sugar, almond extract, and 3 tablespoons of milk in a small bowl. Add more milk, a little at a time, if needed to reach a drizzling consistency.
  8. Step 8: As soon as the bars come out of the oven, spread the glaze over the warm bars.
  9. Step 9: Let the bars cool completely in the pan before slicing into squares.

Notes

You can add a sprinkle of toasted slivered almonds on top of the glaze for extra crunch. If you're a fan of citrus, a little lemon zest in the batter can add a lovely brightness.
