Ingredients
  

For the Beef Mixture
  • 1 tbsp olive oil for cooking beef and onion
  • 1 lb ground beef
  • 1 medium yellow onion chopped
  • 2 tbsp kidney beans rinsed and drained
  • 2 tbsp taco seasoning
For the Salad
  • 4 cups iceberg lettuce or mixed lettuces chopped
  • 1 cup tomatoes chopped
  • 1 medium avocado diced
  • 1 cup shredded cheddar cheese
  • 2 cups crunchy corn chips plain or flavored Doritos
For the Dressing
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lime juice fresh
  • 1 tsp sugar
  • 1/2 tbsp taco seasoning
  • to taste hot sauce optional

Method
 

  1. Step 1: Heat olive oil in a large skillet over medium heat. Add ground beef and chopped yellow onion. Break up meat with a spatula and cook until beef is browned and onions are soft, about 8 to 10 minutes. Drain excess fat.
  2. Step 2: Stir in taco seasoning and rinsed kidney beans. Cook for another 2 to 3 minutes to blend flavors. Remove from heat and let cool slightly.
  3. Step 3: In a small bowl, whisk together mayonnaise, sour cream, lime juice, sugar, taco seasoning, and hot sauce if using to make the dressing.
  4. Step 4: In a large serving bowl, combine chopped lettuce, tomatoes, avocados, shredded cheddar cheese, and the warm beef and bean mixture. Toss gently to mix evenly.
  5. Step 5: Just before serving, add crunchy corn chips and drizzle the dressing over the top. Toss gently to keep chips crisp. Serve immediately.

Notes

To keep chips crunchy, add them just before serving. Store leftover components separately in airtight containers and refrigerate for up to 2 days. Swap ground beef with turkey, chicken, or black beans for variety. Use Greek yogurt instead of mayo for a lighter dressing.
