Ingredients
  

For the Dill Pickle Chicken Salad
  • 2 cups cooked and shredded or chopped chicken leftover rotisserie chicken is great
  • ¾ cup chopped dill pickles good quality
  • ½ cup mayonnaise
  • 3 tablespoons pickle juice from the pickle jar
  • ½ teaspoon dried dill
  • ¼ cup chopped celery
  • ¼ cup chopped or minced red onion
  • salt and pepper to taste
For Assembly
  • 4 croissants sliced in half
  • dill pickle slices optional, for topping
  • lettuce optional, for topping
  • black olives optional, for topping
  • fresh tomatoes optional, for topping

Method
 

  1. Step 1: In a small bowl, whisk together the mayonnaise, pickle juice, minced red onion, and dried dill until everything is nice and combined.
  2. Step 2: In a larger bowl, gently toss together your cooked shredded chicken, chopped celery, and those delicious chopped dill pickles.
  3. Step 3: Pour the mayonnaise mixture over the chicken and pickle mixture. Stir everything together until it's all beautifully coated and well combined.
  4. Step 4: If you like your chicken salad extra creamy, feel free to add another tablespoon of mayonnaise.
  5. Step 5: Taste your creation and add salt and pepper as needed. Remember, pickles can be salty, so start with a little!
  6. Step 6: Cover the bowl and refrigerate for at least one hour to allow the flavors to meld.
  7. Step 7: Once chilled, slice your croissants in half. Generously spread the dill pickle chicken salad mixture onto the bottom halves.
  8. Step 8: Top with lettuce, extra dill pickle slices, black olives, or tomatoes, if desired.
  9. Step 9: Place the top halves of the croissants back on, give it a little press, and serve.

Notes

You can make the chicken salad mixture a day in advance. It actually tastes even better the next day! Store assembled sandwiches separately to prevent sogginess.
