- Prepare the Crust: In a medium bowl, combine graham cracker crumbs, brown sugar, and cinnamon. Stir in melted butter until crumbs are moistened. Press firmly and evenly into the bottom of an 8x8 inch pan.
- Make the Creamy Filling: In a separate bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract, and beat until silky smooth.
- Combine and Spread: Gently fold melted white chocolate chips into the cream cheese mixture until just combined. Spoon evenly over the crust and smooth the top.
- Chill to Perfection: Cover the pan and refrigerate for at least 4 hours, or overnight, until firm. Cut into 16 bars.

These bars can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 2 months. For clean cuts, use a sharp knife and wipe it clean between slices.
