- Step 1: In a blender, combine the cottage cheese, flour, and salt (if using). Blend until the mixture is smooth and pourable, similar to a thick pancake batter.
- Step 2: Warm a nonstick skillet over medium-low heat. Lightly grease it with oil or cooking spray to prevent sticking.
- Step 3: Pour about ¼ cup (60 ml) of batter into the pan. Swirl gently to spread the batter thinly and evenly like a savory crepe.
- Step 4: Cook each side for 1–2 minutes until golden and set, flipping carefully when edges firm up.
- Step 5: Let the tortillas cool for a few minutes to stay flexible and ready to wrap your favorite fillings.
Notes
Use chickpea or gluten-free flour blends as a substitute. Add herbs, spices, or shredded cheese to the batter for flavor variations. Store tortillas in the fridge up to 3 days or freeze with parchment paper between.
