- Step 1: Chop shrimp finely and combine in a bowl with shredded mozzarella, cream cheese, minced garlic, chopped parsley, salt, and pepper. Mix well until creamy and evenly blended.
- Step 2: Lay wonton wrappers on a clean surface. Spoon about a teaspoon of the shrimp mixture onto each wrapper’s center. Fold into triangles and press edges firmly. Brush edges with beaten egg to seal tightly.
- Step 3: Pour oil into a deep pan or skillet to a 2-inch depth. Heat over medium-high until shimmering but not smoking (about 350°F).
- Step 4: Fry the stuffed wontons in batches for 2-3 minutes, turning occasionally until golden brown and crispy all over.
- Step 5: Remove bites with a slotted spoon and drain on paper towels. Optionally, sprinkle with extra parsley and serve warm.
Notes
For a lighter option, bake the bites at 400°F for 12-15 minutes, spritzing with oil beforehand. Freeze un-fried bites on a baking sheet before transferring to a bag for easy future frying. Avoid microwaving leftovers to maintain crispiness.
