  • 2 cups vegetable broth Homemade or store-bought, just make sure it’s tasty!
  • 3 tbsp peanut butter Creamy or crunchy, it's up to you!
  • 2 tbsp soy sauce This adds depth and enhances the flavors.
  • 1 tbsp rice vinegar A hint of acidity balances the richness.
  • 1 tbsp chili paste optional
  • 1 cup mixed vegetables Feel free to use whatever you have on hand.
  • 2 green onions sliced For garnish and a fresh crunch.
  • Sesame seeds for garnish

Method
 

  1. Step 1: Start by cooking the ramen noodles according to the package instructions. Once done, drain and set aside.
  2. Step 2: In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  3. Step 3: Pour in the vegetable broth and stir in the peanut butter, soy sauce, rice vinegar, and chili paste if you’re using it. Bring this delicious mixture to a gentle simmer.
  4. Step 4: Add the mixed vegetables to your skillet and cook for about 3-5 minutes until they are tender yet still vibrant.
  5. Step 5: Toss in the cooked ramen noodles, mixing everything together so the noodles are well coated with that rich sauce and veggies.
