Ingredients

For the Raspberry Layer
  • 2 cups fresh raspberries Bright and bursting with flavor, they are the star of our filling.
  • 2 teaspoons cornstarch This little helper will thicken our raspberry layer so it doesn't get too runny.
  • 1 tablespoon lemon juice Just a touch to brighten up the raspberry flavor and balance the sweetness.
  • 1/4 cup granulated sugar To sweeten those lovely tart berries.
For the Crumble Crust and Topping
  • 1 1/2 cups all-purpose flour The base of our delightful crumble.
  • 1/2 cup granulated sugar For that perfect sweetness in the crumble.
  • 1/2 teaspoon baking powder Just a pinch to give our crumble a little lift.
  • 1/4 teaspoon salt Essential for balancing all the sweet flavors.
  • 1/2 teaspoon cinnamon Adds a warm, cozy note that pairs beautifully with raspberry and chocolate.
  • 1/2 cup unsalted butter cold and diced into 1/4-inch cubes: Cold butter is key for that perfect crumbly texture!
  • 1 large egg yolk This adds richness and helps bind our dough.
  • 1 tablespoon water Just enough to help bring the dough together.
  • 1 teaspoon vanilla extract A classic flavor enhancer that makes everything taste better.
  • 3/4 cup chocolate chips (your choice of dark, semi-sweet, or milk): Because what’s a crumble bar without chocolate?

Equipment

  • 8x8-inch baking pan
  • Parchment paper
  • medium bowl
  • Large bowl
  • Tiny bowl
  • Sharp knife

Method

  1. First things first, preheat your oven to 350°F (175°C). Grab an 8×8 inch baking pan and line it with parchment paper. This makes removing the bars a breeze later on.
  2. In a medium bowl, gently combine your fresh raspberries, cornstarch, lemon juice, and granulated sugar. Give it a gentle stir to coat the berries. We want to keep those little guys as intact as possible!
  3. Now, for our crumble mixture. In a separate, larger bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and cinnamon.
  4. Here’s where the magic happens for that crumbly texture: Add the cold, diced butter to the dry ingredients. Use your fingertips, a pastry blender, or even two forks to cut the butter into the flour mixture. You’re looking for a coarse, crumbly texture, like wet sand.
  5. In a tiny bowl, whisk together the egg yolk, water, and vanilla extract. Pour this wet mixture into the flour and butter crumbs. Mix until a soft dough just starts to come together. Don't overmix – we want it tender!
  6. Take about two-thirds of this dough and press it evenly into the bottom of your prepared baking pan. This forms our delicious crust.
  7. Carefully spread the prepared raspberry mixture evenly over the dough base.
  8. Next, sprinkle those glorious chocolate chips evenly over the raspberry layer. Oh, the anticipation!
  9. Finally, take the remaining one-third of the crumble dough and crumble it over the top of the chocolate and raspberry layers. Distribute it as evenly as you can for that perfect, golden-brown finish.
  10. Bake for 45-50 minutes, or until the top is beautifully golden brown and you can see the raspberry filling bubbling around the edges.
  11. This is the hardest part: Let the bars cool completely in the pan to room temperature. Then, pop them into the refrigerator for a few hours, or even overnight. This step is crucial for them to set up properly so you can get clean slices.

Notes

Love to get creative in the kitchen? Me too! Here are a few ideas to customize these bars:
Berries: Feel free to swap the raspberries for other berries like blueberries, blackberries, or even a mixed berry blend.
Chocolate: White chocolate chips or chopped chocolate bars work wonderfully here too! For a richer flavor, try dark chocolate.
Nuts: Toss in a handful of chopped pecans or walnuts with the chocolate chips for an extra crunch.
Spice: A pinch of nutmeg or cardamom in the crumble mixture can add an interesting depth of flavor.
Citrus Zest: Add some lemon or orange zest to the crumble dough for a subtle citrusy kick.
A few little tricks can make these bars even more amazing:
Cold Butter is Key: Make sure your butter is really cold when you cut it into the flour. This creates steam pockets during baking, resulting in that desirable crumbly texture.
Don't Overwork the Dough: Overmixing can lead to tough bars. Mix just until the ingredients are combined.
Cooling is Crucial: Patience is a virtue, especially when it comes to letting these bars set. Refrigerating them ensures clean cuts and prevents them from falling apart.
Prep Ahead: You can make the crumble mixture a day in advance and store it in the fridge. Just give it a quick stir before using.
Freezer Friendly: These bars freeze beautifully! Wrap them tightly and freeze for up to 3 months.
