- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped spinach until wilted. Remove from heat and let it cool slightly.
- Step 3: In a mixing bowl, combine the cooled spinach, feta cheese, cream cheese, Greek yogurt, salt, and pepper. Mix until everything is well combined.
- Step 4: Cut a pocket in each salmon fillet. Stuff each fillet generously with the spinach and feta mixture.
- Step 5: In a small bowl, mix the breadcrumbs with the remaining tablespoon of olive oil, honey, and red pepper flakes. Season with salt and pepper to taste.
- Step 6: Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Top each fillet with the breadcrumb mixture.
- Step 7: Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the crust is golden and crispy.
- Step 8: Remove from the oven, garnish with fresh herbs if desired, and serve warm.
Notes
Any leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven to maintain that crispy texture.
