Ingredients
  

For the Stuffed Salmon
  • 4 fillets salmon
  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup cream cheese softened
  • 1/4 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • Fresh herbs for garnish (optional)

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped spinach until wilted. Remove from heat and let it cool slightly.
  3. Step 3: In a mixing bowl, combine the cooled spinach, feta cheese, cream cheese, Greek yogurt, salt, and pepper. Mix until everything is well combined.
  4. Step 4: Cut a pocket in each salmon fillet. Stuff each fillet generously with the spinach and feta mixture.
  5. Step 5: In a small bowl, mix the breadcrumbs with the remaining tablespoon of olive oil, honey, and red pepper flakes. Season with salt and pepper to taste.
  6. Step 6: Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Top each fillet with the breadcrumb mixture.
  7. Step 7: Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the crust is golden and crispy.
  8. Step 8: Remove from the oven, garnish with fresh herbs if desired, and serve warm.

Notes

Any leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven to maintain that crispy texture.
