For the Crispy Shrimp
  • 1 lb shrimp peeled and deveined
  • 1 cup cooked jasmine rice
  • 1/2 cup breadcrumbs use panko for extra crunch
  • 1/4 cup all-purpose flour
  • 2 large eggs beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil
  • 1 unit avocado sliced
  • Fresh cilantro
  • Lime wedges

Method
 

  1. Step 1: In a bowl, combine the shrimp, garlic powder, paprika, salt, and pepper. Mix well and set aside for a few minutes.
  2. Step 2: Prepare a breading station with flour, beaten eggs, and breadcrumbs.
  3. Step 3: Dip each shrimp into the flour, then into the eggs, and coat with breadcrumbs.
  4. Step 4: Heat vegetable oil in a skillet over medium heat. Fry the breaded shrimp until golden brown and crispy, about 2-3 minutes per side.
  5. Step 5: Layer a spoonful of cooked jasmine rice, followed by a layer of crispy shrimp, and top with avocado slices.
  6. Step 6: Garnish with fresh cilantro and serve with lime wedges.

Notes

If you have leftovers, store the shrimp and rice separately. The shrimp can be reheated in a skillet for the best texture.
