Crispy Shrimp & Cheese Empanadas

Ingredients
  

For the Filling
  • 1 lb shrimp peeled and deveined
  • 1 cup shredded cheese cheddar or mozzarella
  • 1/2 cup onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1/2 tsp cumin
For the Empanadas
  • 1 package empanada dough discs
  • Vegetable oil for frying essential for crispy texture
  • Fresh cilantro for garnish (optional)

Method
 

  1. Step 1: In a skillet over medium heat, add a little vegetable oil and sauté the onions until they turn translucent. This should take about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Step 2: Add the shrimp to the skillet, along with paprika, cumin, salt, and pepper. Cook until the shrimp are pink and cooked through, about 3-4 minutes. Once done, remove from heat and let it cool slightly.
  3. Step 3: In a mixing bowl, combine the cooked shrimp mixture with the shredded cheese. Stir until well combined.
  4. Step 4: Take one empanada dough disc and place a spoonful of the shrimp and cheese filling in the center. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  5. Step 5: Heat vegetable oil in a deep frying pan over medium-high heat. Once hot, fry the empanadas in batches until golden brown and crispy, about 3-4 minutes per side.
  6. Step 6: Remove the empanadas from the oil and drain on paper towels. Serve warm, garnished with fresh cilantro if desired.

Notes

These empanadas are best enjoyed fresh, but if you have leftovers, you can store them in an airtight container in the fridge for up to 3 days.
