Ingredients
  

  • 5 pounds red potatoes sliced thin or cubed
  • 1 onion yellow or sweet, finely chopped
  • 6 slices bacon chopped
  • 0.5 cup butter diced
  • salt and pepper to taste

  • Aluminum foil
  • Tongs or Spatula

Method
 

  1. Step 1: Preheat oven to 400 degrees Fahrenheit (200°C). Grease a 9x13 inch casserole dish.
  2. Step 2: Spread sliced or cubed potatoes in an even layer in the greased dish. Sprinkle chopped onion and bacon over the potatoes. Scatter diced butter evenly over everything. Season generously with salt and pepper.
  3. Step 3: Cover the dish snugly with aluminum foil. Bake in the preheated oven for 45 minutes.
  4. Step 4: Carefully remove the foil. Stir the potatoes and onions. Turn the oven to broil. Broil for about 5 minutes, stirring every minute or so, until potatoes are browned and crispy.
  5. Step 5: Remove from oven as soon as desired crispiness is reached. Serve immediately while hot and crispy.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Reheat in a hot oven (around 375°F / 190°C) or air fryer for best results. For even cooking, ensure potatoes are sliced uniformly and don't overcrowd the dish.
