Method
 

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: In a bowl, combine olive oil, lemon juice, lemon zest, Italian herbs, salt, and pepper. Add the chicken breasts and marinate for 15-20 minutes.
  3. Step 3: While the chicken is marinating, cook the orzo according to the package instructions. Drain and set aside.
  4. Step 4: Place the marinated chicken on a baking sheet and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Step 5: In a large skillet over medium heat, add fresh spinach and cherry tomatoes. Sauté until the spinach is wilted and the tomatoes are slightly softened.
  6. Step 6: Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
  7. Step 7: In a large bowl, combine the cooked orzo, sautéed spinach and tomatoes, and sliced chicken. Toss gently to combine.
