- Step 1: In a large bowl, combine the shrimp, shredded cheese, coleslaw mix, green onions, garlic, soy sauce, sesame oil, salt, and pepper. Mix well to combine.
- Step 2: Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Place about 2 tablespoons of the shrimp mixture in the center of the wrapper.
- Step 3: Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly to seal. Repeat with the remaining wrappers and filling.
- Step 4: Heat oil in a deep pan or fryer over medium-high heat.
- Step 5: Once the oil is hot, carefully add a few egg rolls at a time and fry until golden brown and crispy, about 3-4 minutes per side.
- Step 6: Remove the egg rolls from the oil and drain on paper towels.
- Step 7: Serve hot with your choice of dipping sauce, like sweet chili or soy sauce.
Notes
If you have any leftovers, let them cool completely before storing. Place them in an airtight container in the fridge for up to 3 days. To reheat, pop them in the oven for a few minutes to regain that crispy texture!
