Ingredients
  

  • 2 medium 2 medium zucchinis cut into fry-like sticks, about 1/4 to 1/2 inch thick
  • 1 cup 1 cup breadcrumbs panko breadcrumbs recommended for extra crispiness
  • 0.5 cup 1/2 cup grated Parmesan cheese
  • 1 tsp 1 teaspoon garlic powder
  • 1 tsp 1 teaspoon onion powder
  • 0.5 tsp 1/2 teaspoon paprika
  • 0.5 tsp 1/2 teaspoon salt
  • 0.25 tsp 1/4 teaspoon black pepper
  • 2 large 2 large eggs beaten
  • Cooking spray or olive oil spray for spraying

Method
 

  1. Step 1: Preheat your air fryer to 400°F (200°C).
  2. Step 2: In a shallow bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Stir well.
  3. Step 3: Wash and slice the zucchinis into fry-like sticks (about 1/4 to 1/2 inch thick). Pat them dry with a paper towel.
  4. Step 4: In another shallow bowl, whisk the eggs. Dip each zucchini stick into the beaten eggs, coating it completely, and let excess drip off.
  5. Step 5: Roll the egg-coated zucchini sticks in the breadcrumb mixture, pressing gently to adhere the coating. Repeat with all zucchini sticks.
  6. Step 6: Arrange the coated zucchini fries in a single layer in the air fryer basket. Do not overcrowd. Lightly spray with cooking spray or olive oil spray.
  7. Step 7: Air fry for 10-12 minutes, shaking the basket halfway through for even browning. Cook until golden brown and crispy.
  8. Step 8: Carefully remove from the air fryer, let cool for a few minutes, and serve with your favorite dipping sauce.

Notes

If you don't have an air fryer, you can bake them in a preheated oven at 400°F (200°C) for 20-25 minutes, flipping halfway through.
