- Step 1: Using a mandolin, slice apples about ⅛ inch thick. Keep the skin on. Shake slices gently to remove any seeds or core bits.
- Step 2: Arrange apple slices in a single layer in the air fryer basket. Do not overlap.
- Step 3: Air fry at 300°F (150°C). After about 8-9 minutes, open the basket and carefully flip or shake the slices. Repeat flipping/shaking around the 12-14 minute mark. Total air frying time will be about 16-18 minutes, but watch closely.
- Step 4: Carefully remove slices that look done (slightly curled, firm) to a wire cooling rack. If any slices still feel damp or squishy, air fry them for another 2 minutes, checking in 1-2 minute increments until firm.
- Step 5: While the apple chips are still warm, sprinkle them generously with the cinnamon and nutmeg mixture.
- Step 6: Let the apple chips cool completely on the wire rack. This is where they achieve maximum crispness.
- Step 7: Once completely cool, transfer the chips to an airtight container for storage.

Slice apples thin and evenly (⅛ inch is ideal) using a mandolin for consistent results. Avoid overcrowding the air fryer basket; work in batches if needed to ensure air circulation. Watch the chips closely, especially the first time you make them, as air fryers vary and they can go from crisp to burnt quickly. Cooling on a wire rack is essential for them to crisp up fully. To prevent browning if slicing ahead, toss apples in a little lemon juice or water/lemon juice mixture, drain well, pat dry, and store in the fridge for up to a day. Store cooled chips in an airtight container at room temperature for 3-5 days. Humidity can cause them to soften over time. Experiment with different apple varieties or add other spices like ginger, allspice, or pumpkin pie spice. A touch of sugar, brown sugar, or sugar substitute can be added with the spices for sweetness, or drizzle with melted dark chocolate or caramel after cooling for a treat.
