- Step 1: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Step 2: In a large bowl, cream together softened butter and granulated sugar until fluffy.
- Step 3: Beat in the egg and vanilla extract until smooth.
- Step 4: In a separate bowl, whisk together flour, baking soda, and salt.
- Step 5: Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
- Step 6: Gently fold in the toffee bits.
- Step 7: Scoop dough into 1-inch balls. Roll each ball in extra granulated sugar until coated.
- Step 8: Place dough balls about 2 inches apart on prepared baking sheets.
- Step 9: Bake for 10-12 minutes, or until edges are golden brown and centers are still soft.
- Step 10: Let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
Notes
To keep cookies soft and chewy, store them with a slice of bread in an airtight container. They can also be frozen for up to 2-3 months.
