Ingredients
  

For the Creamy Tuscan Shrimp Gnocchi
  • 1 lb gnocchi
  • 1 lb shrimp peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 1 tsp Italian seasoning

Method
 

  1. Step 1: Start by cooking the gnocchi according to the package instructions. Once they float to the top, they are ready! Drain and set aside.
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until it’s fragrant.
  3. Step 3: Add the shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  4. Step 4: In the same skillet, toss in the cherry tomatoes and cook for 2-3 minutes until they start to soften.
  5. Step 5: Next, stir in the spinach and cook until it wilts down.
  6. Step 6: Reduce the heat to low and pour in the heavy cream. Stir everything together, then add the Parmesan cheese and Italian seasoning. Mix until the cheese melts and the sauce becomes smooth.
  7. Step 7: Return the cooked shrimp and gnocchi to the skillet. Toss everything together to coat in the creamy sauce. Season with salt and pepper to taste.
  8. Step 8: Serve hot, garnished with fresh basil for an extra pop of flavor!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of cream or broth to loosen the sauce if needed.
